About Benoit Blin

Benoit is the Chef Patissier at Belmond Le Manoir aux Quat’Saisons in Oxfordshire, where he has collaborated closely with Raymond Blanc OBE for over 20 years. Leading a team of 13 pastry chefs, he employs his extensive expertise to create an array of fresh breads, viennoiseries, chocolates, ice creams, pastries, and plated desserts. This esteemed hotel and restaurant has maintained 2 Michelin stars for over 30 years, alongside other accolades such as 5 AA rosettes, and is part of the prestigious Relais & Chateaux collection.
Benoit’s journey began in a small town in Normandy, France, where he grew up surrounded by bakeries. Spending time in these bakeries from an early age, it was only natural for him to apprentice at one. His career advanced through a second apprenticeship as a Patissier, a year of national service as a naval chef, and a stint at the Normandy Hotel in Deauville. In 1991, he became the Senior Sous Chef, Pastry, at the renowned Hotel Ritz in Paris, training with some of France’s best chefs, including MOFs (Meilleur Ouvrier de France). In 1995, Raymond Blanc persuaded him to join Belmond Le Manoir in the UK.
Benoit is actively involved in high-end pastry competitions. He served as Team President of the UK Pastry Team in the 2011 Pastry World Cup and is now the Chairman of the UK Pastry Club, promoting and developing pastry in the UK and supporting future British pastry teams. He also mentors his own team for national and international competitions, aspiring to see a UK team win the Pastry World Cup.
Benoit himself has competed at the highest level, earning the title of MCA (Master of Culinary Arts) in 2005, the highest industry accolade, awarded only every four years to the top Pastry Chefs in the UK. He also holds a French Master’s degree in pastry and was named Pastry Chef of the Year in 2009. Benoit is a long-standing member of the Royal Academy of Culinary Arts.
Additionally, Benoit has served as a juror for numerous competitions, including the UK Pastry Open, UK and European Sugar Championships, National Chef of the Year, British Culinary Federation Chef Competition, and the prestigious Master of Culinary Arts Finals.
